A guitar signal traveling through a cable is a high-impedance, low-level analog signal. High-impedance signals are sensitive to cable capacitance — the electrical property that causes cables to act like a low-pass filter, reducing high frequencies as cable length and capacitance increase. Every cable has capacitance. Cheap cables have more of it, and more capacitance means more high-frequency loss.
The practical result is a guitar tone that sounds slightly dark, slightly blanketed, slightly less present than it should. Not dramatically different.
